Biography: Amanda Pike, PhD, ATR-BC, is a board-certified art therapist, educator, and Florida-certified educational leader. A lifelong gardener, she spent summers exploring her grandparents’ farm and several years living in Cuernavaca, Mexico, where she worked with a holistic wellness company and learned to grow and use plants for health and beauty.
Dr. Pike currently manages a two-acre permaculture food forest in Jupiter, Florida, where she offers tours and hosts youth 4-H groups. Her previous books include Eco-Art Therapy in Practice (Routledge, 2022) and Transforming Florida Yards (2023). Florida’s Food Forest Cookbook continues her mission to empower Floridians to live healthier, more sustainable lives through mindful growing and eating.
